Ingredients
2 egg yolks
4 tbsp of Cream Cheese
1 tbsp butter, plus butter to grease pan
1 oz shredded mozzarella
2 tbsp of plain Greek yogurt
Garlic powder – as desired
No Salt salt and pepper – as desired
Directions
Preheat oven to 350°
Grease small and shallow casserole dish
Soften 2 tbsp of cream cheese in the microwave (15 – 30 seconds). Add 2 egg yolks and beat till smooth. Pour into bottom of casserole dish. Will be a few cm deep in base of the dish. Cook in oven for 8 – 12 minutes (until cooked through).
In a separate dish, combine mozzarella cheese with 2 tbsp of cream cheese, 1 tbsp of butter and 2 tbsp of Greek yogurt. Place in microwave for 1 minute. Remove from microwave and whisk until smooth. Add Garlic powder, No Salt and pepper. Whisk again. Return to microwave for a further 30 – 45 seconds.
Remove egg mixture from oven. Using a lifter, place egg mixture on a cutting board (it should be a shallow square). Once cool, roll egg mixture (like a Swiss roll). Cut off sections across the diameter of the roll. You should have individual “noodles”. Place into bowl.
Cover with Alfredo sauce. Season with No Salt salt and pepper to taste.
Serve hot and savour.
Note: You can exchange mozzarella cheese for Parmesan for a more Alfredo-esque taste. You can also sub in any kind of cream cheese, including herb and garlic which makes this an even more garlic-y dish!
